Curly Flat is an Australian wine legend; one of the few producers that pursue a sustainable agricultural model in the area, with an attention to detail in the vineyard that borders on obsessive. As a result of their innovative methods, they haven’t used herbicides since 2006. Their wines are acclaimed for their longevity, and are among Australia’s most collected. Head winemaker Matt Harrop, of Shadowfax fame has continued the winemaking traditions of his predecessor Philip Moraghan, which focuses on gentle whole bunch pressing and barrel fermentation. Sea salt, lemon curd and lime blossom notes on the nose wind into a beguiling, creamy palate of roasted cashew, lime, grapefruit and a finely woven minerality that leads to an impressive finish. Another belter from Curly Flat. 

Ocean Eight Verve Chardonnay

The Aylward’s family history on the Mornington Peninsula started much earlier than the 12-year enterprise that is Ocean Eight. The original owners of Kooyong Estate, the Aylward family – led by son Michael, head winemaker – has been championing estate grown wines since the early 2000s. His wines are exceedingly elegant. His Verve Chardonnay is produced from the first grapes picked on the Peninsula to retain a steely, firm acidity, with very little evident oak influence and almost no malolactic fermentation. His approach to lean, refined cool climate varieties led Michael to win Young Gun Winemaker of the Year in 2011, only a few years after Ocean Eight was established. His Verve Chardonnay - named for its vivacious, lively acidity - is his flagship for a reason, exemplifying the crisp minerality and aromatics of the Mornington Peninsula.

Giant Steps Applejack Vineyard Chardonnay

Phil Sexton’s Giant Steps winery is amongst the greatest in the Yarra Valley. Head winemaker Steve Flamsteed has guided the wines from strength to strength, with his terroir-focused, sustainable winemaking winning him Gourmet Traveller’s Winemaker of the Year in 2016. The stunning Applejack Vineyard is a higher altitude site than many in the valley, retaining freshness in the grapes, leading to pristine, aromatic and complex wines. The slow ripening period of the 2017 vintage further contributed to the quality of this inimitable wine. Vibrant acidity and bright fruit are the hallmarks of this wine, with grapefruit juice, white peach, green apple, almond, lemon rind and a creamy, savoury and nutty undercurrent. Incredibly fresh and nervy, this is only going to improve with a couple of years age.
