oysters with raspberry mignonette
Here's one for all the Oyster fanatics out there. A simple, yet delicious Raspberry Mignonette that pairs perfectly with some fresh oysters and a glass or two of Lansdowne Vineyard 'It's Not My Fault I Like Bubbles' Sparkling Pinot Noir NV.
For the mignonette, combine all ingredients in a small serving bowl, adding salt and pepper to taste and allow at least 30 minutes for the flavours to combine. Serve alongside freshly shucked oysters. Add the sauce to taste just before you consume the oysters.

For the Mignonette
1 small shallot or ½ red onion, diced very finely
90 ml raspberry vinegar
90 ml white wine vinegar
freshly ground black pepper and sea salt
